Vegetable Kolhapuri




                                                 Veg Kolhapuri




Vegetable kolhapuri is originated from western Maharashtra Kolhapure. It is basically a thick coconut based extra spicy curry  loaded with vegetables.

Servings : 4 to 6                                                                                            
Ingredients:

  • Carrot - 1
  • Potato - 1
  • Capsicum - 1
  • Green Chilli - 1 pc
  • Cauliflower - 150 gms
  • Peas - 100 gms
  • Beans - 100 gms
  • Onion - 1
  • Tomato - 3 (puree)
  • Ginger - 1 inch piece
  • Dry coconut - 1/4 cup (grated)
  • Seasame seeds - 1 tsp
  • Cream - 2 tsp
  • Oil
  • Cashew : 4 to 6 (soaked for 30 mins)"
  • Green coriander - 
  • Asafoetida - 1 pinch
  • Cumin seeds - 1/4 tsp
  • Tumeric powder - 1/4 tsp
  • Coriander powder - 1 tsp
  • Garam Masala - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Salt to taste
Method: 

  • First rinse, peel and chop the vegetables.
  • Steam all veggies in a pressure cooker or steamer .You can fry them also its your choice.
  • Wash tomatoes, green chilli and ginger and grind in mixer grinder to make fine paste.
  • Now take a non stick pan and roast sesame seeds and grated coconut powder on a low flame, saute till they turns little brown in colour. Once they cool grind it in a mixer grinder.
         


             

  • Now heat 2 tsp oil in a non stick pan add asafoetida, cumin seeds, soaked c
  • ashew and onion. Saute on a medium flame till onion turns pinkish in color. Once they cool grind it in a mixer grinder.


  • Now again heat 2 tsp oil in a non stick pan add onion paste and saute for 1 minute.
  • Now add tomato paste and all spices coriander powder, tumeric powder, red chilli powder and garam masala saute until oil starts separating from it. After sauting masala add sesame and coconut paste. Saute for few minutes and then add fresh cream into it. Stir continuously and saute for 2-3 minutes.







  • When oil starts separating from masala add green peas and cook for 2-3 minutes.
  • Add 1/2 or 3/4 cup water and salt and mix it well.When the gravy starts simmering add steamed vegetables into it and mix.Saute for 3 minutes with stir ocassionally.
  • Now veg kolhapuri is ready, garnish with coriander leaves. 
  • Serve with tawa paratha, naan or kulcha.
