Vegetable Biryani
Vegetable Biryani

🕠Cooking Time: 30 mins Serving : 4 to 6 people
Ingredients:
- Basmati Rice- 2 cups
- Water- 4 cups
- Mixed vegetables- Beans, Carrot, Cauliflower, capsicum, Potato, Peas
- Onion sliced- 2 nos
- Bay leaf- 1
- Ginger- 1/2 tsp http://fkrt.it/Wfuwf2NNNN
- Green chillies- 3 nos
- Fennel- 2 tsp
- Coriander powder- 2 tsp
- Red chilli powder- 1/2 tsp
- Cloves- 3 nos
- Cardamom- 3 nos
- Cinnamon- 1 no.
- Garam masala- 1 tsp
- Jeera- 1/2 tsp
- Ghee or oil- 4 or 5 tsp
- Chopped coriander leaves- 2 tsp
- Chopped mint leaves- 1 tsp
- Salt to taste
Method:
- Soak rice for at least 10 mins.
- Chop all the vegetables.
- Add oil or ghee in a pressure cooker and heat it.
- Add ginger, fennel, green chilli and all spices and saute it for 1 or 2 mins till you get a nice aroma.
- Add onion and saute it till it turns golden.
- Add all chopped vegetables and mint leaves saute it for 2 minutes.
- Add rice ,salt and water and stir.
- Close the cooker with lid and give 2 to 3 whistles.
- When the pressure goes down open the cooker garnish it with coriander leaves
- Serve it with curd or raita.
